Slow cooker eggs Benedict. This is very famous eggs recipe.I trying to cook these eggs in slow cooker. Serve eggs Benedict with homemade Hollandaise sauce.
Makes 4 servings

Ingredients:
  • boiling water
  • 2 teaspoons white vinegar
  • 8 large eggs
  • 4 English muffins
  • Hollandaise sauce (see recipe bellow)
  • kosher salt and freshly ground black pepper to taste


Cooking Method:
  1. Fill 6-quart (6 L) slow cooker with water 1 1/2 inches (3.7 cm) deep.
  2. Stir in white vinegar.Cook on high heat setting while preparing ingredients for next step.
  3. Crack eggs,one at a time,into a small bowl.Pour into hot water gently.
  4. Cook on high heat setting for 5 minutes,or until white as just set and yolks are still soft.
  5. Poached eggs may be  served immediately or keep them warm,turning slow cooker to warm setting and adding enough cool water.
  6. Meanwhile,split and toast muffins.
  7. In a large nonstick skillet,fry bacon over medium-high heat until bacon golden brown.
  8. Arrange each toasted muffin on separate plate.Top each half with 1 slice cooked bacon,1 poached egg and top with Hollandaise sauce.
  9. Season with salt and black pepper.

Hollandaise Sauce:

Ingredients:
  • 3 egg yolks
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon cream
  • 1 cup (250 ml) unsalted melted butter
  • 1 tablespoon freshly squeezed lemon juice
Cooking Method:
  1. In a blender,combine egg yolks,salt,black pepper and cream.
  2. Blend until smooth.
  3. Remove center of blender lid.Turn blender to high and pout in half of melted hot butter in a thin steady stream.
  4. Add lemon juice and stream in remaining hot butter.
  5. Keep Hollandaise sauce warn in double boiler.
